When I started my journey in healthy living, I was completely out of shape, I didn’t know how to make exercise and clean-eating part of my life…God, I didn’t even know where to start!

It took every ounce of my willpower to make this change happen, but at the time I knew I didn’t have a choice. I had to regain control of my life.

But before I could even THINK about lasting change I knew I had to get MY MIND IN ORDER.

I was in a nasty cycle of self-hatred & negative thinking. I was convinced that I was just a total victim of circumstance and other people and were responsible for my happiness and well-being.


I wanted to be happier, I was just so embroiled in darkness and negativity that I was sure this was just how ‘adulthood’ was supposed to feel. I figured some day things would change…



For months, I flailed around not really knowing what I was doing. I didn’t have a game plan in place and was just winging it. It wasn’t pretty.

But then I added personal development to my daily routine and I was amazed at how much of a game changer it was! Working on my mind as well as my body has made such a difference in my life!!! It grounds me. When my mind starts to wander back into those negative spaces, I study a great leader’s work, or listen to a self-help book in my car. The things I’ve learned from personal development ALWAYS pull me out of despair and moments of self-doubt.

That’s what I want for you!

A healthy body. A healthy mind. And a happy life.

Zoodles – FixATE recipe, 21 Day Fix Friendly

I picked up my new FixATE cookbook at Summit in Nashville. It has 101-21 Day Fix approved recipes that I can’t wait to try!

We made these zucchini pasta noodles tonight in a matter of minutes. Seriously it took longer to boil the water to steam the zucchini.

Swap out your pasta this week with these ‘Zoodles’. It’s really good and your waistline will thank you! 😏




4 medium zucchini

hot water

1 cup of CLEAN tomato sauce

2 Tbsp Fresh Basil

2 Tbsp grated Parmesan cheese


  1. Using a vegetable peeler, cut each zucchini into lengthwise strips about 1/8 -inch thick. Turn zucchini slightly after cutting each strip to work evenly around the outside, stopping when you hit the seeds at the core. Disgrace the cores. ut slices lengthwise into 1/2-inch ribbons. Set aside.
  2. Boil water in steamer (or large saucepan over hight heat. Reduce heat to medium-high. Place zucchini in steamer basket; cook for 2 to 3 minutes, or until tender. Remove from heat.
  3. Divide zucchini evenly between four serving plates; top evenly with tomato sauce, basic and cheese.


Zucchini can also be sliced on a mandolin; adjust to a very thin slice.


Add grilled chicken to get some protein in this meal.

21 Day Fix EXTREME Vegan Meal Plan

Meal planning is in full swing over here. For this round of the 21 Day Fix EXTREME, I have simplified the meal plan – both for my own sanity and for optimal results. I’ve been overcomplicating this process for months!!

Meal planning doesn’t have to be painful. You can cook everything in batches on Sunday and put it in the fridge for 5 days if that works best for you. You can freeze the last two day’s meals if you want to, just make sure you remember to take them out of the freezer on Wednesday. But everything will keep for 5 days.

I’m carb cycling this week with the 21 Day Fix Extreme. So Monday and Tuesday look like the picture:

Meal 1: Oatmeal & Egg White Pancake (video to follow this week) ↔ 1 yellow 💛, 1 red  + 1 tsp

Meal 2: Shaekology ↔ 1 red 

Meal 3: tofu + broccoli ↔ 1 red , 1 green 💚 + 1 tsp

Meal 4: tofu + green beans ↔ 1 red , 1 green 💚

Meal 5 (not shown): tofu + broccoli ↔ 1 red , 1 green 💚 + 1 tsp

Meal 6 (not shown): Shakeology ↔ 1 red 

Also not shown is the cans of tuna & also the chicken we made in the crock pot for my husband’s meals.

All meals will be spaced 2-3 hours apart and we’ll be done eating by 7pm.

I’m always looking for high-protein, clean snacks to fill the gap between lunch and dinner and to pack in my family’s lunch to keep them full but without the junk. This is a great recipe that everyone seems to like. Moist and chewy and packed full of vitamins, nutrients and superfoods 🙂

Shakeology Brownie Snacks


  • ½ cup  all-natural smooth almond butter
  • 1 scoop Chocolate Vegan Shakeology
  • 1  medium ripe banana, mashed
  • ¼ cup  quick-cooking rolled oats
  • 3 Tbsp. chopped raw almonds (or walnuts or sun flower seeds)


  1. Combine almond butter, Shakeology, banana, oats, and almonds in a medium bowl; mix well.
  2. Roll mixture into twelve 1-inch balls; place in airtight container.
  3. Refrigerate for at least 1 hour before serving.

Makes about 12 bite-sized balls.

Slow Cooker Enchilada Quinoa

It’s healthy, easy and protein packed.

Set your crock pot and forget about it!

**This recipe doesn’t take long in the crock pot, so I would recommend putting it on either a very low setting or doing it on the weekend when you’re home all day. I put mine on low and it was done after 6 hours. In fact it was bubbling!!!

Slow Cooker Enchilada Quinoa


  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can yellow corn, drained and rinsed
  • 30-ounces red enchilada sauce, divided (I made this sauce and froze what I didn’t use)
  • 1 15-ounce can of diced fire roasted tomatoes and green chiles
  • 1 cup un-cooked quinoa + ½ cup water
  • 4 ounces cream cheese (light or fat free is okay)
  • salt and pepper to taste (I used about 1 teaspoon salt and ¼ teaspoon black pepper)
  • 1 cup shredded Mexican style cheese
  • optional: chopped cilantro, diced tomatoes, diced avocado, sour cream
  1. Add beans, corn, 1 can of enchilada sauce, diced tomatoes and chiles, quinoa, water, cream cheese, and salt and pepper to the slow cooker. Stir everything together.
  2. Pour remaining can of enchilada sauce on top, then sprinkle with shredded cheese. Cover and cook 4-5 hours on high or 5-7 hours on low.
  3. Uncover, top with tomatoes, avocados, sour cream, and chopped cilantro and serve.
